Ground Chicken Meatballs with Meat Mitch White Sauce
At Alabama barbecue joints, smoked chicken breast tends to get a liberal dousing of white sauce, a blend of mayo, cider vinegar, horseradish, brown sugar, Dijon, lemon juice and cayenne. The tradition started at Big Bob Gibson's in Decatur, Ala. The original idea was to keep chicken from drying out on the grill and work similar with meatballs. Kansas City absorbs many inspirations from across the country, and local award-winning pitmaster Mitch Benjamin, who hails from the competition barbecue world, tips his hat to the traditional sauce with Meat Mitch White Sauce.

Directions

Chicken Meatballs with Meat Mitch White Sauce

Makes 20 meatballs

1 pound Barham Family Farm Ground Chicken

2 teaspoons of your favorite barbecue rub

1 teaspoon black pepper

1 teaspoon dried oregano

2 teaspoons chopped garlic

Salt, to taste

1 egg

About 1 1/2 cup whole-wheat panko breadcrumbs

Butter lettuce, to serve

Meat Mitch White Sauce WHOMP! (available in some grocery stores and at meatmitch.com)

Barham Family Farm Candied Jalapeño, to garnish, if desired

Preheat the oven to 350° F. Spray a rimmed baking sheet non-stick cooking spray

In a mixing bowl, combine all ingredients except lettuce and barbecue sauce. Roll meatballs and place in the oven to bake for about 20 minutes. Flip the meatballs and continue to cook for 5-10 minutes, or until done.

Serve meatballs on a bed of butter lettuce drizzled liberally with white sauce and garnished with candied jalapeño.
