Buffalo-Style Ground Chicken Meatballs
Makes 16 meatballs
1 pound Barham Family Farm Ground Chicken
1 cup Italian-flavor panko breadcrumbs
1 egg
1 teaspoon olive oil
1/4 cup minced green onions
1/4 cup shredded carrots
1/2 cup creamy Buffalo sauce, divided, (We used Red Hot brand.)
2 tablespoons crumbled Maytag blue cheese
For garnish:
Celery and carrot sticks
Blue Cheese
Preheat oven to 400° F. Cover a rimmed baking sheet with a silicone baking mat.
In a large mixing bowl, combine ground chicken, breadcrumbs, egg, olive oil, green onions, carrots, 1/4 cup buffalo sauce and bleu cheese. Combine the mixture with your hands and roll into 24 balls. Bake for 20-25 minutes or until golden brown and the internal temperature registers 165° F. on a meat thermometer.
Allow meatballs to cool slightly. Serve with remaining 1/4 cup Buffalo sauce, more blue cheese, celery and carrot sticks.
