Ingredients
- (2 pounds) Ground Chicken
- Roasted Garlic Pasta Sauce
Directions
Makes 12 muffins
2 pounds Barham Family Farm Ground Chicken
1 egg
2/3 cup Italian bread crumbs
2 teaspoons minced garlic
2 teaspoons Italian seasoning
1/2- 1/2 cup shredded Paremesan cheese, plus more to top
1 cup Barham Family Farm Pasta Sauce, any flavor
Dried basil, sprinkle
Preheat oven to 350° F. Spray standard muffin pan with vegetable cooking spray.
In a mixing bowl, combine ground chicken, egg, bread crumbs, garlic, seasoning mixture and cheese. Knead until well combined.
Fill each muffin cup with the mixture. Use a brush to paint pasta sauce over the top to baste. Sprinkle each meatloaf with basil and bake for 15 minutes. Top each meatloaf with a sprinkle of cheese and bake for another 5 minutes. Use a butter knife to remove meatloaves and serve.
