Barham Ground Chicken Hummus Burger

Makes 3-4 patties
1 pound Barham Family Farms Ground Chicken
1 tablespoon Dijon
1 tablespoon plain Greek yogurt
1 teaspoon za'atar seasoning (a Middle Eastern blend found in many supermarkets)
1 tablespoons minced black olives, optional
8 chives, snipped, divided
Salt and pepper, to taste
1/4 to 1/2 cup whole wheat panko crumbs
Brioche sesame seed buns
Sliced cucumbers, if desired
Garlic hummus, or your favorite flavor
Red onion, very finely chopped
4 brioche buns
Preheat the oven to 350° F.
In a mixing bowl, use your hands to combine the ground chicken, Dijon, yogurt, zaatar, olives, chives, salt and pepper. Add enough panko crumbs to barely hold the meat together when shaped into a patty.
Spread remaining panko crumbs in a wide, shallow plate. Coat chicken patties with more panko and place in a grill pan. Bake the patties for 20-30 minutes, or until the breading begins to brown.
Split the brioche bun and cover bottom with lettuce leaves. Place burger on top of the bun and cover with cucumber slices. Spoon hummus on top of the burger and sprinkle with chives and red onion. Place top bun over the hummus and serve.
