Ingredients
- (1-2 pounds) Pork Tenderloin
- Raspberry Jalapeño Jam
Directions
1 (1-2 pound) Barham Family Farm Pork Tenderloin
Salt and pepper, to taste
Barham Family Farm Seasoning Blend or fresh rosemary, finely chopped, or dried, plus more for garnish
1 jar Beautiful Day Farms Jam, such as Rosemary Habanero or Raspberry/Jalapeño or Rhubarb
Rustic bread, cut into slices
1-2 tablespoons butter
Gorgonzola crumbles
Pomegranate seeds
Preheat the oven to 425 degrees.
Remove tenderloin from the bag and blot excess moisture with a paper towel. Using a sharp knife, remove any silver skin. Rub meat all over with salt and pepper, seasoning blend or fresh chopped rosemary.
Heat canola oil in an oven-safe skillet over medium-high heat and sear the tenderloin on all sides using tongs until brown.
Place the seared tenderloin in the oven and roast for 15-20 minutes or until the internal temperature reaches 145 on a meat thermometer. Do not overcook; the tenderloins should remain slightly pink in the middle. Allow meat to rest 10 minutes and slice.
Toast slices of rustic artisan bread. Spread with thin smear of butter and a thicker layer of jam. Place slices of tenderloin on top. sprinkle with additional fresh chopped rosemary. Garnish with gorgonzola crumbles and pomegranate seeds.
