1 package Barham Family Farm Spicy Italian Brats (four brats)
1 pound pasta (we like penne)
1 (14.5-ounce) can cannellini beans, rinsed and drained
1/2 jar sundried tomatoes in oil, do not drain
1/4 cup Niçoise black olives, coarsely chopped
1/4 cup chopped parsley
1/2 cup Greek feta in brine, rinsed and crumbled
Red pepper flakes, to garnish
In a small skillet over medium-high heat, sear the brats, turning with tongs after 4-5 minutes to brown the opposite side. When the brats are golden brown on all sides and cooked through, remove from pan and allow to rest on a cutting board. Slice sausage into 1 inch rounds.
Heat a large pot of water and bring to a boil. Cook pasta according to package directions and drain.
Meanwhile, in a mixing bowl, add beans, tomatoes, olives, parsley, feta and sausage.
Pour hot pasta over all and stir to combine.
Sprinkle with red pepper flakes, if desired.
