Barham Basics: Ground Pork Burrito Wrapped in a Yoli Tortilla

Ingredients
- (1 pound) Ground Pork
Directions
1 pound Barham Family Farm Ground Pork
3-4 cups fresh spinach
1 (16-ounce) jar of green tomatillo sauce
1 (14.5-ounce) can black beans, drained and heated
1 cup rice
1 package of Yoli (8-inch) pork-fat flour tortillas
Cook the sausage in a skillet over medium-heat until the meat is no longer pink. Drain sausage, if desired, and wilt fresh spinach in the pan, stirring to combine. Add tomatillo sauce and allow the mixture to warm through. Spread rice over lower half fo the tortilla and add black beans and sausage. Roll the tortilla up burrito-style and place seam side down in a hot pan, allowing the tortilla to bloom with brown speckles. Carefully flip burrito to speckle on the other side. Garnish with guacamole or sour cream, if desired.
