Ingredients
- (2 slices) Sliced Peppered Beef
- 1 Dozen Duck Eggs
Directions
Makes 2 servings
Vegetable cooking spray
2 Barham Family Farm Duck Egg
1 tablespoon feta cheese
1 teaspoon snipped fresh dill
2 English muffins or egg-based hamburger buns
2 slices Barham Family Farm Deli Peppered Beef
Sliced avocado
1 tablespoon cream cheese
Spray a tall microwaveable coffee cup with cooking spray. Add eggs, feta and dill and whisk slightly with a fork. Place mug in microwave, covered with a silicone coffee mug cover and heat on HIGH for 1 minute 30 seconds. Remove the eggs and slide egg soufflé cylinder onto a small plate to slice in half.
Place a slice of pepper beef on each bun, add egg and a slice of avocado. Spread cream cheese on the opposite side of the bun toppers and place on top to create a hearty breakfast sandwich.
