Barham Family Farm Arugula, Goat Cheese and Heirloom Tomato Frittata
Our eggs make light and fluffy egg dishes like this frittata. An arugula pesto adds a lemony, herbaceous finish that complements juicy, ripe and flavorful tomatoes.

Ingredients

Directions

Vegetable cooking spray

10 Barham Family Farm eggs

1/2 cup milk

Arugula, several handfuls

Herbaceous seasoning blend of your choice, such as herbes de provence, za'atar

Salt and pepper, to taste

Sliced heirloom tomatoes

Goat cheese, softened

Pesto, handfuls of basil or arugula emulsified with olive oil

Preheat the oven to 350°F. Spray 10-inch tart pan with cooking  spray.

In a mixing bowl, whisk eggs until yolks are well combined. Add arugula and whisk until well moistened. Season egg mixture and pour into prepared pan. Lay slices of tomato atop the eggs. Dot spaces with teaspoons of goat cheese. Season tomatoes with salt and pepper. Bake for 18-20 minutes, or until eggs are set. 

Serve cut in wedges with dots of pesto.
